A few weeks ago I made this cake: A Dutch Butter Cake. I think it should be renamed Can't-Just- Eat-One-Slice Cake. A friend was moving away many years ago, and I requested several of her recipes with which to remember her. She always managed to make things from scratch while raising and homeschooling 4 children (now grown) and sharing multitudinous dinners and lunches and even breakfasts at her home with many others. I was the recipient of many wonderful meals and conversations.
So I thought I'd share it with you:
Dutch Butter Cake
1 cup butter, softened
2 cups flour
1 cup sugar
1 tsp baking powder
1 Tbsp. almond extract
1 egg, slightly beaten
sliced almonds (a handful) -optional
Cream butter & sugar. Add almost all of the egg. (Save the remainder for an egg wash mixed with a drop or two of water). Stir in remainder of ingredients by hand. Pat into two un-greased pie plates. Spread with egg wash. Sprinkle with sliced almonds. Bake 350F for 30-35 minutes or until golden. Slice thin once it cools and serve with coffee.
